Ingredients
In this Sudanese adaptation of Porchetta, we incorporate traditional Sudanese spices such as cumin, coriander, ginger, and cinnamon to infuse the pork with a distinct Sudanese flavor profile. Additionally, we adjust the cooking technique to slow-roasting, which allows the flavors to develop and the meat to become tender while maintaining a crispy exterior. We alse have the original recipe for Porchetta (Umbria), so you can check it out.
