In this Sudanese adaptation of Porchetta, we incorporate traditional Sudanese spices such as cumin, coriander, ginger, and cinnamon to infuse the pork with a distinct Sudanese flavor profile. Additionally, we adjust the cooking technique to slow-roasting, which allows the flavors to develop and the meat to become tender while maintaining a crispy exterior. 1.Preheat the oven to 160°C (320°F).

2.In a small bowl, combine the ground cumin, ground coriander, ground ginger, ground cinnamon, minced garlic, olive oil, salt, and black pepper to create a spice paste.

3.Place the pork belly on a clean surface and score the skin with a sharp knife in a crisscross pattern.
