Preparation

  1. 1.
In a small bowl, dissolve the yeast in warm milk and let it sit for 5 minutes until frothy.
  2. 2.
In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and add the yeast mixture, vegetable oil, and eggs. Mix until a soft dough forms.
  3. 3.
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.
  4. 4.
In the meantime, prepare the filling by combining the chopped nuts, sugar, cardamom, and cinnamon in a bowl.
  5. 5.
Preheat the oven to 180°C (350°F) and grease a round baking pan.
  6. 6.
Punch down the risen dough and roll it out into a rectangular shape on a floured surface.
  7. 7.
Brush the melted ghee over the rolled-out dough, leaving a small border around the edges.
  8. 8.
Spread the nut filling evenly over the dough, pressing it gently.
  9. 9.
Starting from one of the longer sides, carefully roll the dough into a tight log.
  10. 10.
Transfer the rolled dough to the greased baking pan, tucking the ends underneath to seal.
  11. 11.
Bake for 30-35 minutes or until the bread is golden brown and sounds hollow when tapped.
  12. 12.
Remove from the oven and let it cool for a few minutes before transferring to a wire rack to cool completely.
  13. 13.
Once cooled, slice the Bhojpuri Nut-filled Sweet Bread into thick slices and serve.
