Ingredients
In this Turkish adaptation of Presnac, we replace the traditional filling of walnuts with crushed pistachios, which are commonly used in Turkish desserts. Additionally, we incorporate honey into the recipe to enhance the sweetness and add a distinct Turkish flavor. The pastry remains similar to the original, with its flaky and buttery texture, but the filling and flavor profile are uniquely Turkish. Preparation

1.In a large mixing bowl, combine the flour, sugar, and salt. Add the cold butter cubes and use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.

2.Gradually add the cold water, a little at a time, and mix until the dough comes together. Shape the dough into a ball, cover it with plastic wrap, and refrigerate for 30 minutes.

3.Preheat the oven to 180°C (350°F).

4.In a separate bowl, mix together the crushed pistachios, honey, ground cinnamon, ground cloves, ground cardamom, and vanilla extract until well combined.

5.On a lightly floured surface, roll out the chilled dough into a rectangle about 1/4 inch thick.

6.Spread the pistachio filling evenly over the dough, leaving a small border around the edges.

7.Carefully roll up the dough, starting from one of the longer sides, to form a log. Seal the edges by pinching them together.

8.Place the rolled dough onto a baking sheet lined with parchment paper. Bake for 30-35 minutes, or until the pastry is golden brown.

9.Remove from the oven and let it cool completely. Dust with powdered sugar before serving.
