Preparation

1.Preheat the oven to 350°F (180°C).

2.In a large bowl, combine the grated sweet potatoes, flour, brown sugar, cinnamon, nutmeg, vanilla extract, milk, melted butter, and salt. Mix well until all the ingredients are fully incorporated.

3.Grease a baking dish and pour the pudding mixture into it. Smooth the top with a spatula.

4.Bake the pudding in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

5.While the pudding is baking, prepare the souse. Rinse the pickled pork under cold water to remove excess salt. Cut the pork into small pieces.

6.In a large pot, combine the pickled pork, water, sliced onion, sliced cucumber, lime juice, chopped parsley, hot pepper sauce (if using), salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for 1-2 hours, or until the pork is tender.

7.Once the pudding is baked, remove it from the oven and let it cool for a few minutes.
