Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

2.In the same pot, add the diced onion, minced garlic, and Scotch bonnet pepper. Sauté until the onion is translucent and fragrant.

3.Add the Barbadian curry powder, paprika, dried thyme, and bay leaf to the pot. Stir well to coat the onions and spices.

4.Return the browned beef to the pot and pour in the beef broth, coconut milk, and diced tomatoes. Stir to combine.

5.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, or until the beef is tender and the flavors have melded together.

6.Add the diced tropical fruit to the pot and simmer for an additional 10 minutes.

7.Season with salt and pepper to taste. Remove the bay leaf.
