Treat your ingredients with care...
- Almonds — Make sure to use ground almonds for the almond paste to achieve a smooth texture.
- Dark chocolate — Choose a high-quality dark chocolate with at least 70% cocoa for the best flavor.
- Marzipan — Dust your work surface with powdered sugar to prevent the marzipan from sticking while rolling it out.
Tips & Tricks
- For a more pronounced Middle Eastern flavor, add a pinch of ground cloves to the almond paste.
- If you don't have orange blossom water, you can substitute it with rose water or vanilla extract.
- To achieve a glossy finish on the chocolate glaze, temper the chocolate before coating the rolls.
