Ingredients

In this Western European adaptation of Puran Poli, we have made a few modifications to suit the local taste preferences. Instead of using jaggery, we will be using brown sugar as a substitute. Preparation

    In a large mixing bowl, combine the all-purpose flour and salt for the dough. Gradually add water and knead until a smooth and elastic dough is formed. Cover the dough with a damp cloth and let it rest for 30 minutes.

    Rinse the split yellow lentils thoroughly and cook them in a pressure cooker or a pot with enough water until they are soft and mushy. Drain any excess water.

    In a separate pan, heat the brown sugar over medium heat until it melts and forms a syrup-like consistency. Add the cooked lentils, cardamom, nutmeg, and cinnamon to the pan. Mix well and cook for another 5 minutes until the mixture thickens. Remove from heat and let it cool.

    Divide the dough into small balls and the lentil filling into equal portions.

    Take a dough ball and roll it out into a small circle. Place a portion of the lentil filling in the center and bring the edges of the dough together to seal it. Flatten the filled dough ball and dust it with all-purpose flour.
