Preparation

1.Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they turn golden brown.

2.Add the cubed lamb or beef to the pot and cook until browned on all sides.

3.Stir in the ground cumin, ground coriander, ground cinnamon, and ground turmeric. Cook for an additional 2 minutes to allow the spices to release their flavors.

4.Add the rice to the pot and stir well to coat it with the spices and meat.

5.Pour in the chicken or beef broth and season with salt to taste. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.

6.Remove the pot from the heat and let it sit, covered, for 5 minutes to allow the flavors to meld.
