Preparation

1.Drain and rinse the soaked chickpeas.

2.In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

3.Add the soaked chickpeas, dried oregano, dried thyme, and bay leaf to the pot. Stir well to coat the chickpeas with the aromatic herbs.

4.Pour enough water into the pot to cover the chickpeas by about 2 inches. Bring to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the chickpeas are tender.

5.Once the chickpeas are cooked, remove the bay leaf and stir in the lemon juice. Season with salt and pepper to taste.
