1.Drain and rinse the soaked chickpeas.

2.In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.

3.Add the diced carrots and celery to the pot, and cook for an additional 5 minutes.

4.Stir in the dried thyme, dried rosemary, and bay leaf, and cook for another minute to release their flavors.

5.Add the soaked chickpeas and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 1 to 1.5 hours, or until the chickpeas are tender.

6.Season with salt and pepper to taste.

7.Remove the bay leaf from the pot.
