Preparation

1.Heat the olive oil in a large pan over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

2.Add the Arborio rice to the pan and stir well to coat the grains with oil. Cook for 2-3 minutes, until the rice becomes slightly translucent.

3.Pour in the white wine and cook until it evaporates, stirring constantly.

4.Gradually add the fish or vegetable broth, one ladle at a time, stirring continuously until the liquid is absorbed before adding the next ladle.

5.In a separate pan, heat a tablespoon of olive oil and sauté the mixed seafood until cooked through. Set aside.

6.Once the rice is al dente and creamy, stir in the cooked seafood, chopped rosemary, and thyme. Season with salt and pepper to taste.

7.Remove from heat and let the risotto rest for a few minutes before serving.
