Preparation

1.In a bowl, combine the minced garlic, dried oregano, ground cumin, paprika, salt, black pepper, lime juice, and orange juice to make the marinade.

2.Place the pork shoulder in a large ziplock bag and pour the marinade over it. Seal the bag and massage the marinade into the pork. Refrigerate for at least 4 hours or overnight.

3.Preheat the oven to 325°F (160°C).

4.Remove the pork from the marinade and place it in a roasting pan. Discard the marinade.

5.Roast the pork in the preheated oven for about 3 hours, or until the internal temperature reaches 145°F (63°C).

7.Slice the crusty bread rolls in half and spread mayonnaise on both sides.

8.Layer the sliced pork and pickles on the bottom half of each roll. Cover with the top half of the roll.
