Preparation

  1. 1.
In a bowl, combine the olive oil, orange juice, lime juice, minced garlic, cumin, paprika, oregano, coriander, salt, and pepper. Mix well to create a marinade.
  2. 2.
Add the thinly sliced pork shoulder to the marinade and toss until the meat is evenly coated. Allow it to marinate for at least 1 hour, or overnight for maximum flavor.
  3. 3.
Preheat your grill or skillet over medium-high heat. Cook the marinated pork slices for about 4-5 minutes per side, or until they are cooked through and slightly charred. Remove from heat and let it rest for a few minutes.
  4. 4.
In a small bowl, combine the mayonnaise, Greek yogurt, lime juice, and salt to create a creamy sauce.
  5. 5.
Warm the pita breads in a toaster or on a grill for a few seconds on each side.
  6. 6.
To assemble the gyros, spread a spoonful of the creamy sauce on each pita bread. Top with a handful of shredded lettuce, diced tomatoes, red onion, pineapple, and the cooked pork slices. Sprinkle with fresh cilantro.
  7. 7.
Fold the pita breads in half and secure with toothpicks if needed. Serve the Puerto Rican Style Gyros warm with a side of pineapple salsa.

Treat your ingredients with care...

  • Pork shoulder — For the best results, choose a well-marbled pork shoulder as it will provide juiciness and flavor to the gyros.
  • Pineapple — Use fresh pineapple for a burst of tropical sweetness. If fresh is not available, you can use canned pineapple chunks, drained well.

Tips & Tricks

  • To add an extra layer of flavor, you can marinate the pork overnight in the refrigerator.
  • If you prefer a spicier gyro, add a pinch of cayenne pepper or a few dashes of hot sauce to the marinade.
  • Don't overcook the pork to ensure it remains tender and juicy.
  • If you don't have pita bread, you can use tortillas or flatbread as a substitute.
  • Serve the gyros with a side of plantain chips for an authentic Puerto Rican touch.
