Preparation
-
1.In a bowl, combine the soy sauce, fish sauce, oyster sauce, brown sugar, minced garlic, ground coriander, ground cumin, turmeric powder, paprika, chili powder, salt, and black pepper. Mix well to create a marinade.
-
2.Add the thinly sliced pork loin to the marinade and toss until the meat is evenly coated. Allow it to marinate for at least 30 minutes, or refrigerate overnight for maximum flavor.
-
3.Preheat your grill to medium-high heat.
-
4.Thread the marinated pork slices onto skewers, leaving a small space between each piece.
-
5.Brush the grill grates with vegetable oil to prevent sticking. Place the skewers on the grill and cook for 3-4 minutes per side, or until the pork is cooked through and slightly charred.
-
6.While the pork is grilling, prepare the spicy peanut sauce. In a small saucepan, combine the peanut butter, soy sauce, lime juice, honey, sriracha sauce, minced garlic, and water. Heat over low heat, stirring constantly, until the sauce is smooth and well combined. Remove from heat and set aside.
-
7.Once the pork is cooked, remove it from the grill and let it rest for a few minutes.
-
8.Serve the grilled Rod Duan skewers with steamed jasmine rice, fresh cucumber slices, lettuce leaves, and a generous drizzle of the spicy peanut sauce.
Treat your ingredients with care...
- Pork loin — For the best results, choose a lean cut of pork loin with minimal fat. This will ensure that the meat stays tender and juicy during grilling.
- Peanut butter — Opt for a creamy peanut butter with no added sugar or salt. This will provide a smooth texture and allow the other flavors to shine through.
Tips & Tricks
- Soak the skewers in water for 30 minutes before threading the meat onto them. This will prevent them from burning on the grill.
- If you prefer a milder spice level, reduce the amount of sriracha sauce in the peanut sauce.
- For a vegetarian version, you can substitute the pork with tofu or grilled vegetables.
Serving advice
Serve the Rod Duan skewers on a platter, garnished with fresh cilantro leaves and chopped peanuts for added crunch. Provide extra bowls of the spicy peanut sauce for dipping, as it is the star of the dish.
Presentation advice
Arrange the grilled Rod Duan skewers in a visually appealing pattern on the platter. Place the steamed jasmine rice in a separate bowl and surround it with the fresh cucumber slices and lettuce leaves. Drizzle the spicy peanut sauce over the skewers and sprinkle some sesame seeds for an extra touch of elegance.
