Preparation

  1. 1.
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. 2.
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. 3.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. 4.
Gradually add the flour to the butter mixture, mixing until a soft dough forms.
  5. 5.
Take a small portion of the dough and roll it into a rope shape. Join the ends to form a ring and place it on the prepared baking sheet. Repeat with the remaining dough.
  6. 6.
Bake the cookies for 12-15 minutes or until they turn golden brown around the edges.
  7. 7.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  8. 8.
Once cooled, dust the Rosquillo Cookies with powdered sugar.

Treat your ingredients with care...

  • Butter — Make sure the butter is softened at room temperature for easier creaming with the sugar.
  • Eggs — Use large eggs at room temperature for better incorporation into the dough.
  • Flour — Measure the flour accurately by spooning it into the measuring cup and leveling it off with a knife.

Tips & Tricks

  • For a variation, you can add a teaspoon of lemon zest to the dough for a citrusy twist.
  • If you prefer a sweeter taste, you can increase the amount of granulated sugar to 3/4 cup.
  • Store the cooled Rosquillo Cookies in an airtight container to maintain their crispness.
  • These cookies make a lovely gift when packaged in a decorative tin or box.
  • Serve the Rosquillo Cookies alongside a hot cup of tea or coffee for a delightful treat.
