Ingredients
While the original Indian samosa is typically filled with spiced potatoes and peas, our Mediterranean adaptation replaces these ingredients with a combination of Mediterranean vegetables and herbs. The spices are also adjusted to reflect the flavors commonly found in Mediterranean cuisine. Additionally, the traditional deep-frying method is replaced with baking for a healthier twist. Preparation

1.In a large mixing bowl, combine the flour and salt. Add the olive oil and mix until the mixture resembles breadcrumbs.

2.Gradually add water and knead the dough until it forms a smooth ball. Cover the dough with a damp cloth and let it rest for 30 minutes.

3.In a skillet, heat a tablespoon of olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

4.Add the zucchini and red bell pepper to the skillet and cook until they are tender. Remove from heat and let it cool.

5.In a separate bowl, combine the cooked vegetables, feta cheese, parsley, dried oregano, ground cumin, salt, and pepper. Mix well.

6.Preheat the oven to 200°C (400°F).

7.Divide the dough into small balls and roll each ball into a thin circle.

8.Cut each circle in half and fold it into a cone shape, sealing the edges with water.

9.Fill each cone with the vegetable and cheese mixture, then seal the top.

10.Place the samosas on a baking sheet lined with parchment paper. Brush them with olive oil.

11.Bake for 20-25 minutes, or until the samosas are golden brown and crispy.
