Preparation

1.In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

2.Add the Arborio rice to the pot and stir well to coat the grains with the oil. Cook for a couple of minutes until the rice becomes slightly translucent.

3.Pour in the white wine and cook until it evaporates, stirring occasionally.

4.Gradually add the seafood broth, one cup at a time, stirring constantly. Allow the rice to absorb the broth before adding more.

5.Once the rice is almost cooked, add the fish fillets, shrimp, and mussels or clams to the pot. Cook for an additional 5-7 minutes until the seafood is cooked through and the rice is tender.

6.Stir in the chopped parsley and season with salt and pepper to taste.

7.Remove from heat and let the rižot rest for a few minutes before serving.
