1.In a large pot, combine the diced quinces, sugar, lemon juice, and water.

2.Place the pot over medium heat and bring the mixture to a boil, stirring occasionally.

3.Reduce the heat to low and simmer for about 1 hour, or until the quinces are soft and the mixture has thickened.

4.Stir in the vanilla extract and continue to cook for an additional 5 minutes.

5.Remove the pot from the heat and let the jam cool slightly.

6.Transfer the jam to sterilized jars and seal tightly.

7.Allow the jam to cool completely before storing it in the refrigerator.
