Preparation

1.Preheat the oven to 160°C (320°F).

2.In a large oven-safe pot, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10 minutes.

3.Season the beef chuck roast with smoked paprika, garlic powder, salt, and black pepper.

4.Push the caramelized onions to one side of the pot and place the seasoned beef chuck roast in the pot. Pour the BBQ sauce over the roast.

5.Cover the pot with a lid and transfer it to the preheated oven. Cook for 3-4 hours, or until the beef is tender and easily shreds with a fork.

6.Remove the pot from the oven and shred the beef using two forks.

7.Place the pot back on the stovetop over low heat and simmer for an additional 10 minutes to allow the beef to absorb the flavors of the BBQ sauce.
