Ingredients
In this Centrafrican adaptation of Sohan Asali, we incorporate the unique flavors and ingredients of Central African cuisine. While the original Iranian recipe uses saffron and cardamom for flavoring, we replace them with local spices such as cinnamon and nutmeg to infuse the brittle with a warm and aromatic taste. Preparation

1.Preheat the oven to 180°C (350°F).

2.Spread the roasted almonds on a baking sheet and toast them in the oven for 8-10 minutes until fragrant. Remove from the oven and let them cool.

3.In a large saucepan, heat the honey over medium heat until it reaches a rolling boil.

4.Reduce the heat to low and simmer the honey for 10 minutes, stirring occasionally.

5.Add the toasted almonds, ground cinnamon, ground nutmeg, and salt to the saucepan. Stir well to coat the almonds evenly.

6.Continue cooking the mixture on low heat for another 5 minutes, stirring constantly.

7.Remove the saucepan from the heat and quickly pour the mixture onto a greased baking sheet or silicone mat.

8.Use a spatula to spread the mixture evenly to a thickness of about 1/4 inch.

9.Let the brittle cool completely at room temperature for about 1 hour, or until it hardens.

10.Once hardened, break the brittle into small, bite-sized pieces.
