Ingredients

In the South Karnataka adaptation of the garlic soup, we incorporate traditional South Indian spices like mustard seeds, cumin, and curry leaves to enhance the flavor profile. Additionally, we use coconut milk to add a creamy texture and a hint of sweetness, which is not typically found in the original French version. Treat your ingredients with care...

  • Garlic — To mellow the flavor of garlic, you can roast the cloves before adding them to the soup. Simply wrap the unpeeled garlic head in foil and bake at 180°C (350°F) for 30 minutes. The roasted garlic will have a sweeter and nuttier taste.
  • Coconut milk — Shake the can of coconut milk well before using to ensure the cream and liquid are well combined.

Tips & Tricks

  • For a spicier kick, add a finely chopped green chili along with the onions.
  • If you prefer a thinner consistency, you can add more vegetable broth or water.
  • Serve the soup with a side of crusty bread or steamed rice for a more substantial meal.
  • Adjust the amount of red chili powder according to your spice preference.
  • To make the soup more filling, you can add cooked lentils or chickpeas.
