Preparation

1.Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

2.Add the ground cumin, coriander, turmeric, cinnamon, paprika, and cayenne pepper (if using). Stir well to combine and cook for an additional minute.

3.Add the shredded chicken, mashed chickpeas, raisins, and fresh parsley to the pan. Season with salt and pepper to taste. Mix everything together and cook for 2-3 minutes until heated through.

4.Remove the mixture from heat and let it cool slightly.

5.Take one spring roll wrapper and place it on a clean surface. Spoon about 2 tablespoons of the filling onto the wrapper, spreading it in a horizontal line across the center.

6.Fold the bottom edge of the wrapper over the filling, then fold in the sides. Roll the wrapper tightly, sealing the edges with a bit of water.

7.Repeat the process with the remaining wrappers and filling.

8.Heat vegetable oil in a deep pan or fryer to 180°C (350°F). Carefully place the spring rolls into the hot oil and fry until golden brown and crispy, about 3-4 minutes.

9.Remove the spring rolls from the oil and drain on a paper towel-lined plate to remove excess oil.

10.Serve the Arab-style Spring Rolls hot and crispy with your favorite dipping sauce.
