Preparation

  1. 1.
Rinse the sushi rice under cold water until the water runs clear. Drain well.
  2. 2.
In a saucepan, combine the sushi rice and water. Bring to a boil, then reduce the heat to low and cover. Cook for 15 minutes or until the rice is tender and the water is absorbed.
  3. 3.
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour the mixture over the cooked rice and gently fold it in using a wooden spoon. Let the rice cool to room temperature.
  4. 4.
Lay a sheet of nori (seaweed) on a bamboo sushi mat. Wet your hands with water to prevent sticking and spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border at the top.
  5. 5.
Arrange strips of smoked salmon, cucumber, carrot, and avocado in a line across the center of the rice. Roll the sushi tightly using the bamboo mat, applying gentle pressure to seal the roll.
  6. 6.
Repeat the process with the remaining ingredients.
  7. 7.
Slice each sushi roll into bite-sized pieces using a sharp knife.
  8. 8.
Serve the New Nordic Sushi rolls garnished with fresh dill and accompanied by pickled radishes and lingonberry jam.

Treat your ingredients with care...

  • Sushi rice — Rinse the rice thoroughly to remove excess starch for a fluffier texture.
  • Smoked salmon — Use high-quality smoked salmon for the best flavor and texture.
  • Pickled radishes — Make sure to pickle the radishes in advance to allow the flavors to develop fully.
  • Lingonberry jam — Opt for a homemade or artisanal lingonberry jam for a burst of tangy sweetness.
  • Fresh dill — Use fresh dill sprigs as a garnish to add a touch of Nordic herbaceousness.

Tips & Tricks

  • Experiment with different Nordic ingredients such as pickled herring or sea buckthorn for unique flavor combinations.
  • For a vegetarian version, substitute smoked salmon with marinated tofu or roasted root vegetables.
  • Add a touch of acidity to the sushi rice by incorporating a splash of apple cider vinegar or lemon juice.
  • Use a sharp knife to slice the sushi rolls cleanly without squishing the ingredients.
  • Serve the New Nordic Sushi rolls with a side of traditional Nordic rye bread for a wholesome meal.
