Preparation

1.Rinse the sushi rice in cold water until the water runs clear.

2.In a medium saucepan, combine the rice and water and bring to a boil.

3.Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed.

4.In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar has dissolved.

5.Transfer the cooked rice to a large bowl and add the vinegar mixture. Stir gently to combine.

6.Lay a sheet of nori seaweed on a sushi mat or a piece of plastic wrap.

7.Wet your hands and grab a handful of rice. Spread the rice evenly over the nori, leaving a 1-inch border at the top.

8.Arrange your fillings in a line across the center of the rice.

9.Lift the edge of the mat or plastic wrap closest to you and roll it away from you, pressing gently to keep the roll tight.

10.Repeat with the remaining nori sheets and fillings.
