The original Mexican recipe typically uses a creamy sauce and includes cheese, which we replace with a spicy sambal sauce and fresh herbs to infuse the dish with Javanese influences.   • 500g (1.1 lb) shrimp, peeled and deveined
  • 2 lemongrass stalks, white parts only, finely chopped
  • 2 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2cm (0.8 inch) galangal, grated
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tbsp vegetable oil
  • 8 small tortillas
  • Fresh cilantro leaves, for garnish
  • Fresh mint leaves, for garnish

Preparation
