Preparation

  1. 1.
In a large pot, heat the sesame oil over medium heat. Add the sliced onions and minced garlic, and sauté until fragrant.
  2. 2.
Add the gochugaru and stir for a minute to release its flavors.
  3. 3.
Add the fish or vegetable broth, carrots, and potatoes to the pot. Bring to a boil and then reduce the heat to a simmer.
  4. 4.
Gently place the grey mullet fillets into the pot, making sure they are submerged in the broth. Simmer for about 10-15 minutes, or until the fish is cooked through and flakes easily.
  5. 5.
Remove the fish fillets from the pot and set aside. Using a fork, gently break the fish into smaller pieces.
  6. 6.
Add the doenjang and soy sauce to the pot, stirring well to incorporate.
  7. 7.
Return the fish to the pot and simmer for an additional 5 minutes to allow the flavors to meld together.
  8. 8.
Season with salt and pepper to taste.
  9. 9.
Serve the Taedong River Mullet Stew hot, garnished with fresh cilantro or green onions.
