In this adaptation of the traditional Honduran dish, Tapado de pescado, we have incorporated soul food elements to create a unique fusion. While the original dish uses coconut milk as a base, we have replaced it with a flavorful broth made with tomatoes, onions, and bell peppers, commonly found in soul food recipes. Preparation

1.In a large pot, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened and fragrant.

2.Add the diced tomatoes to the pot and cook for a few minutes until they start to break down.

3.Pour in the chicken broth and add the paprika, thyme, cayenne pepper, bay leaf, salt, and pepper. Stir well to combine.

4.Bring the broth to a simmer and add the shrimp, fish fillets, and crab legs. Cook for about 10-15 minutes, or until the seafood is cooked through and tender.

5.Remove the bay leaf from the pot and discard.
