Preparation

1.Preheat the oven to 200°C (400°F).

2.Slice the tomatoes in half and remove the seeds.

3.In a large oven-safe skillet, heat the olive oil over medium heat.

4.Add the balsamic vinegar and honey to the skillet, stirring until well combined.

5.Place the tomato halves, cut side down, in the skillet, arranging them in a single layer.

6.Sprinkle the dried oregano, dried thyme, salt, and pepper over the tomatoes.

7.Cook the tomatoes for 5-7 minutes, until slightly softened and caramelized.

8.Roll out the puff pastry sheet to fit the size of the skillet.

9.Carefully place the puff pastry over the tomatoes, tucking in the edges.

10.Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pastry is golden brown.

11.Remove the skillet from the oven and let it cool for a few minutes.

12.Place a large serving plate over the skillet and carefully invert the Tarte Tatin onto the plate.
