1.Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic, and sauté until fragrant.

2.Add the carrot, bell pepper, and mushrooms to the pot. Cook for 5 minutes, until the vegetables start to soften.

3.In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, ginger, and Chinese five-spice powder.

4.Add the tofu cubes to the pot and pour the sauce mixture over them. Stir gently to coat the tofu and vegetables.

5.Pour in the vegetable broth and bring the stew to a boil. Reduce the heat and let it simmer for 15 minutes.

6.Stir in the cornstarch mixture to thicken the stew. Season with salt and pepper to taste.

7.Remove from heat and garnish with fresh cilantro.
