Preparation

  1. 1.
Rinse the jasmine rice under cold water until the water runs clear. Drain well.
  2. 2.
In a medium saucepan, combine the rinsed rice, milk, sugar, and salt. Bring to a boil over medium heat, stirring occasionally.
  3. 3.
Reduce the heat to low and simmer for about 20 minutes, or until the rice is tender and the mixture has thickened, stirring occasionally.
  4. 4.
In a separate bowl, whisk the eggs, vanilla extract, ground cinnamon, and ground cardamom together.
  5. 5.
Slowly pour the egg mixture into the rice mixture, stirring continuously to prevent the eggs from scrambling.
  6. 6.
Continue to cook the mixture over low heat for another 5 minutes, stirring constantly, until the pudding thickens further.
  7. 7.
Remove the saucepan from the heat and let the pudding cool slightly.
  8. 8.
Pour the pudding into individual tube molds or ramekins and refrigerate for at least 2 hours, or until set.
  9. 9.
Once set, carefully remove the pudding from the molds and serve chilled.

  • Serve the pudding with a drizzle of honey or a dollop of whipped cream for extra indulgence.
  • Experiment with different spices such as nutmeg or ginger to customize the flavor of the pudding.
  • To achieve a smoother texture, strain the pudding mixture before pouring it into the molds.
