Preparation

  1. 1.
Preheat the grill to medium-high heat.
  2. 2.
In a bowl, combine the sliced bell peppers, zucchini, and red onion. Drizzle with half of the olive oil and balsamic vinegar. Season with salt and pepper, and toss to coat.
  3. 3.
Grill the marinated vegetables for 5-7 minutes, or until they are tender and slightly charred. Remove from the grill and set aside.
  4. 4.
In a separate pan, heat the remaining olive oil over medium heat. Add the Swedish meatballs and cook until browned and cooked through.
  5. 5.
Warm the Tunnbröd in a dry skillet or on the grill for a few seconds on each side.
  6. 6.
To assemble the Tunnbrödsrulle, spread a thin layer of lingonberry sauce on each Tunnbröd. Place 3 meatballs in the center of each Tunnbröd, followed by a generous amount of grilled vegetables. Drizzle with dill sauce.
  7. 7.
Roll up the Tunnbrödsrulle tightly, tucking in the sides as you go. Cut in half diagonally and serve.

Treat your ingredients with care...

  • Tunnbröd — If you can't find Tunnbröd, you can substitute it with thin tortillas or lavash bread.
  • Lingonberry sauce — If lingonberry sauce is not available, cranberry sauce can be used as a substitute.
  • Swedish meatballs — You can make your own Swedish meatballs using a mixture of ground beef and pork, seasoned with spices like allspice and nutmeg.

Tips & Tricks

  • For a vegetarian version, substitute the Swedish meatballs with grilled tofu or tempeh.
  • Add a sprinkle of fresh dill or parsley on top of the Tunnbrödsrulle for an extra burst of freshness.
  • Serve the Tunnbrödsrulle with a side of pickled cucumbers for a tangy and refreshing accompaniment.
  • If you prefer a spicier kick, add a pinch of chili flakes to the grilled vegetables.
  • Customize the fillings by adding sliced avocado, pickled red cabbage, or cucumber for additional flavors and textures.

Serving advice
