1.Heat the olive oil in a large pot over medium heat. Add the rabbit pieces and cook until browned on all sides. Remove the rabbit from the pot and set aside.

2.In the same pot, add the onion, garlic, carrots, celery, and red bell pepper. Cook until the vegetables are softened.

3.Stir in the tomato paste, white wine, red wine vinegar, bay leaves, dried thyme, dried rosemary, paprika, salt, and pepper. Cook for a few minutes to allow the flavors to meld together.

4.Return the rabbit pieces to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat to low and simmer for about 2 hours, or until the rabbit is tender.
