To make the perfect Panipuri, mix boiled and mashed potatoes with boiled chickpeas. Add salt, red chilli powder, cumin powder, and chaat masala to the mixture. Mix well and keep aside. Make small balls of the mixture and keep them aside. Make small puris with flour and semolina and deep-fry them until they are crispy. Make a small hole in the puri and fill it with the potato and chickpea mixture. Pour tamarind chutney over the puri and garnish with chopped coriander leaves and sev.

Tips & Tricks

To make the puris crispy, make sure the oil is hot enough before frying. Also, make sure to roll the puris thin and evenly. To make the tamarind chutney, soak tamarind in warm water for a few hours and then strain the pulp. Add jaggery, salt, red chilli powder, and cumin powder to the pulp and mix well. Boil the mixture until it thickens.
