1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they turn golden brown.

3.Sprinkle the ground coriander, cumin, and turmeric over the chicken, and stir well to coat the pieces evenly with the spices.

4.Add the diced sweet potatoes, carrots, kale, peas, and rice to the pot. Stir everything together to combine.

5.Pour in the chicken broth and season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low and cover the pot.

6.Simmer the stew for about 45 minutes to 1 hour, or until the chicken is cooked through and the rice and vegetables are tender.
