Preparation

1.Rinse the monkfish liver under cold water and pat dry with a paper towel.

2.In a steamer, place the monkfish liver and steam for 20 minutes until cooked through.

3.Remove the liver from the steamer and let it cool to room temperature.

4.In a small bowl, mix together soy sauce, mirin, sake, grated ginger, and grated garlic.

5.Place the cooled monkfish liver in a shallow dish and pour the soy sauce mixture over it. Let it marinate for at least 2 hours in the refrigerator.
