Preparation

1.In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

2.Add the Arborio rice to the saucepan and stir well to coat the grains with the oil.

3.Pour in the coconut milk and vegetable broth, and stir in the saffron threads and rosemary sprig.

4.Bring the mixture to a boil, then reduce the heat to low and cover the saucepan with a lid. Allow the rice to simmer for about 20 minutes, or until the liquid is absorbed and the rice is tender.
