Ingredients
In the original Portuguese dish, Arroz de enfermo, the rice is cooked with chicken broth and flavored with garlic and onion. However, in this Macedonian adaptation, we replace the chicken broth with a vegetable broth to make it suitable for a wider range of diets. Additionally, we infuse the rice with traditional Macedonian herbs, such as oregano, thyme, and parsley, to add a distinct Mediterranean flavor profile. 1.In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

2.Add the rice to the pot and stir well to coat it with the oil, onion, and garlic mixture.

3.Pour in the vegetable broth and bring it to a boil. Reduce the heat to low, cover the pot, and let the rice simmer for about 15-20 minutes, or until all the liquid is absorbed and the rice is tender.

4.Once the rice is cooked, remove the pot from the heat and let it sit, covered, for 5 minutes.

5.Fluff the rice with a fork and stir in the dried oregano, dried thyme, and fresh parsley. Season with salt and pepper to taste.
