Preparation

1.Preheat the oven to 180°C (350°F).

2.In a bowl, combine the finely chopped almonds, granulated sugar, matcha powder, and ground cinnamon. Mix well.

3.Brush a baking dish with melted butter.

4.Place a sheet of phyllo dough in the baking dish and brush it with melted butter.

5.Repeat step 4 with 5 more sheets of phyllo dough.

6.Sprinkle a generous amount of the almond mixture over the phyllo dough.

7.Layer 3 more sheets of phyllo dough, brushing each sheet with melted butter.

8.Repeat steps 6 and 7 until all the almond mixture is used, ending with a layer of phyllo dough on top.

9.Cut the baklava into diamond or square shapes.

10.Bake in the preheated oven for 30-35 minutes, or until golden brown.

11.While the baklava is baking, prepare the syrup by combining water, honey, and vanilla extract in a saucepan. Bring to a boil and simmer for 5 minutes.

12.Remove the baklava from the oven and immediately pour the hot syrup over it.
