Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and sauté until golden brown.

2.Add the beef cubes to the pot and cook until browned on all sides.

3.Stir in the turmeric, cumin, coriander, cinnamon stick, and cardamom pods. Cook for 1-2 minutes until fragrant.

4.Pour in the coconut milk, beef broth, tomato paste, soy sauce, and brown sugar. Season with salt and pepper to taste.

5.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, or until the beef is tender.

6.Remove the cinnamon stick and cardamom pods from the pot.

7.Serve the Indo-style Beef Bourguignon hot, garnished with fresh cilantro. Enjoy with steamed rice or crusty bread.
