Preparation

1.Preheat the oven to 200°C (400°F).

2.Season the beef fillet with salt and black pepper.

3.Heat the vegetable oil in a large skillet over high heat. Sear the beef fillet on all sides until browned. Remove from the skillet and let it cool.

4.In the same skillet, cook the bacon until crispy. Add the sauerkraut and cook for 5 minutes, stirring occasionally. Remove from heat and let it cool.

5.Spread the Bavarian mustard evenly over the cooled beef fillet.

6.Roll out the puff pastry on a lightly floured surface. Place the sauerkraut and bacon mixture on top of the pastry.

7.Place the beef fillet on top of the sauerkraut mixture and wrap the pastry tightly around the beef, sealing the edges.

8.Brush the pastry with the beaten egg wash.

9.Transfer the wrapped beef fillet onto a baking sheet and bake for 30-35 minutes, or until the pastry is golden brown and the beef is cooked to your desired doneness.

10.Remove from the oven and let it rest for 10 minutes before slicing.
