Preparation

1.In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside.

2.In the same pot, add the sliced smoked sausage and beef stew meat. Cook until browned on all sides. Remove the meats and set aside.

3.In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent.

4.Add the sauerkraut, shredded cabbage, sliced carrots, diced potatoes, diced tomatoes (with their juice), beef broth, bay leaf, dried thyme, and the cooked bacon and meats.

5.Season with salt and pepper to taste. Stir well to combine all the ingredients.

6.Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2-3 hours, stirring occasionally, until the meats are tender and the flavors have melded together.

7.Remove the bay leaf before serving.

8.Serve the New England Style Bigos hot, garnished with fresh parsley if desired.
