1.Heat the vegetable oil in a large pot over medium heat. Add the veal cubes and brown them on all sides. Remove the veal from the pot and set aside.

2.In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.

3.Add the sliced carrots and cubed potatoes to the pot and cook for a few minutes until slightly softened.

4.Return the veal to the pot and sprinkle with ground coriander, cumin, and paprika. Stir well to coat the meat and vegetables with the spices.

5.Pour in the coconut milk and stock, and season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low and cover the pot.

6.Simmer the stew for about 1.5 to 2 hours, or until the veal is tender and the flavors have melded together.
