1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.

2.Add the diced bell pepper and sliced carrots to the pot, and cook for an additional 5 minutes, until the vegetables start to soften.

3.Stir in the ground cumin, ground coriander, paprika, turmeric, salt, and black pepper. Cook for 1 minute, until the spices become fragrant.

4.Add the cubed potatoes, diced tomatoes, and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the potatoes are tender.
