1.Heat the vegetable oil in a large skillet or wok over medium-high heat.

5.Push the vegetables to one side of the skillet and add the cubed tofu to the empty space. Cook for 2-3 minutes until the tofu is lightly browned.

6.In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, sugar, salt, and pepper. Pour the sauce over the vegetables and tofu, tossing to coat evenly.
