Preparation

  1. 1.
In a large mixing bowl, combine the bread flour, instant yeast, sugar, and salt.
  2. 2.
Add the softened butter and mix until it resembles coarse crumbs.
  3. 3.
Gradually pour in the warm milk while stirring, until a soft dough forms.
  4. 4.
Transfer the dough to a floured surface and knead for about 10 minutes, until smooth and elastic.
  5. 5.
Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. 6.
Punch down the dough to release any air bubbles, then divide it into 8 equal portions.
  7. 7.
Shape each portion into a round ball and place them on a baking sheet lined with parchment paper.
  8. 8.
Cover the rolls with a kitchen towel and let them rise for another 30 minutes.
  9. 9.
Preheat the oven to 200°C (400°F).
  10. 10.
Brush the rolls with beaten egg and sprinkle sesame seeds on top, if desired.
  11. 11.
Bake for 15-20 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.
  12. 12.
Remove from the oven and let them cool on a wire rack before serving.

Treat your ingredients with care...

  • Bread flour — Using bread flour will give the Bulkie Rolls a chewier texture compared to all-purpose flour. If you don't have bread flour, you can substitute it with all-purpose flour, but the texture may be slightly different.
  • Instant yeast — Make sure your yeast is fresh and active. If you're unsure, you can proof the yeast by dissolving it in warm milk with a pinch of sugar and waiting for it to become foamy before adding it to the dry ingredients.
  • Sesame seeds — Toasting the sesame seeds before sprinkling them on top of the rolls will enhance their flavor.

Tips & Tricks

  • For a shiny crust, brush the rolls with an egg wash made by whisking together an egg and a tablespoon of water before baking.
  • To achieve a softer crust, cover the rolls with a clean kitchen towel immediately after removing them from the oven.
  • Experiment with different toppings such as poppy seeds, flaky sea salt, or dried herbs to add extra flavor to the rolls.
  • If you prefer smaller rolls, divide the dough into 12 portions instead of 8.
  • These rolls freeze well, so you can make a batch in advance and thaw them as needed.

Serving advice

Serve the Bulkie Rolls warm or at room temperature. They are perfect for making sandwiches, such as classic deli sandwiches, pulled pork, or even as burger buns. Slice them horizontally and fill them with your favorite ingredients for a satisfying meal.
