Preparation

1.In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and sliced onion, and sauté until fragrant.

2.Add the beef bones, beef shank, lemongrass, dried chili peppers, and shrimp paste to the pot. Stir well to combine.

3.Pour in the beef broth and bring to a boil. Reduce the heat to low and let it simmer for at least 2 hours, skimming off any impurities that rise to the surface.

4.While the broth is simmering, cook the rice noodles according to the package instructions. Drain and set aside.

5.Once the broth has developed a rich flavor, remove the beef bones and lemongrass stalks from the pot. Season the broth with fish sauce, sugar, and salt to taste.

6.To serve, divide the cooked rice noodles among bowls. Top with the sliced beef shank and ladle the hot broth over the noodles.

7.Garnish with bean sprouts, lime wedges, Thai basil, and cilantro. Serve hot and enjoy!
