Ingredients

1.Drain and rinse the soaked Mantuan beans. In a large pot, add the beans and cover with water. Bring to a boil, then reduce heat and simmer until the beans are tender, approximately 1 to 1.5 hours. Drain and set aside.

2.In a separate pot, heat olive oil over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sauté until the vegetables are softened and fragrant.

3.Add the cooked Mantuan beans to the pot with the sautéed vegetables. Stir in the cumin, paprika, dried oregano, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.

4.Meanwhile, cook the rice according to package instructions. Once cooked, fluff the rice with a fork.

5.Combine the cooked rice with the bean mixture, gently folding them together until well incorporated. Adjust seasoning if needed.
