Preparation

1.In a large mixing bowl, combine the flour, eggs, water, and salt. Knead the dough until smooth and elastic. Cover with plastic wrap and let it rest for 30 minutes.

2.In a separate bowl, mix together the ground beef, ground lamb, Parmesan cheese, chopped almonds, chopped dates, chopped parsley, ground cumin, ground coriander, ground turmeric, salt, and pepper. Set aside.

3.Roll out the pasta dough on a floured surface until thin. Cut out circles using a round cookie cutter or a glass.

4.Place a spoonful of the filling in the center of each pasta circle. Fold the circle in half, sealing the edges to form a half-moon shape. Press the edges firmly to ensure they are sealed.

5.In a large pot of salted boiling water, cook the pasta for about 5-6 minutes or until al dente. Drain and set aside.

6.In a saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

7.Add the crushed tomatoes, ground cumin, ground coriander, ground turmeric, salt, and pepper to the saucepan. Simmer for 10-15 minutes, allowing the flavors to meld together.

8.Serve the cooked pasta with the Saharan-inspired tomato sauce. Garnish with chopped fresh parsley and chopped almonds.
