1.In a large pot, heat the olive oil over medium heat. Add the sliced Occitan sausages and cook until browned. Remove the sausages from the pot and set aside.

2.In the same pot, add the diced onion, carrots, parsnips, and potatoes. Sauté until the vegetables start to soften.

3.Add the minced garlic, thyme leaves, bay leaf, paprika, and dried oregano. Stir well to combine.

4.Pour in the diced tomatoes and beef or vegetable broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes, or until the vegetables are tender.
