Ingredients
In this Sabahan adaptation, we incorporate local Sabahan spices and ingredients to add a unique twist to the traditional Mexican Chiles Capones. The stuffing is enhanced with aromatic Sabahan spices, such as turmeric and ginger, which infuse the dish with a warm and earthy flavor. Preparation

1.Preheat the oven to 180°C (350°F).

2.Cut a lengthwise slit in each chili and remove the seeds and membranes.

3.In a pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

4.Add the ground meat to the pan and cook until browned. Drain any excess fat.

5.Stir in the turmeric powder, ginger powder, cumin powder, paprika, and salt. Cook for an additional 2 minutes to allow the flavors to meld.

6.Remove the pan from heat and let the mixture cool slightly.

7.Stuff each chili with the meat mixture and place them on a baking sheet.

8.Sprinkle the grated cheese over the stuffed chilies.

9.Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and golden brown.

10.Garnish with fresh cilantro and serve hot.
